The core of the blade is made of VG10. By the way, Tojiro has both the F Series (Tojiro) and the FU Series (Fujitora), and this knife belongs to the FU Series (Fujitora). The F Series and FU Series knives are the same. The names, logos, sales channels, the way the sales prices are determined, and the warranty systems are just different, but the contents of the knives are exactly the same. The purple paper is a warranty card, but it can only be used in Japan. Please take a look at photos 22, 23, and 24. For the 22nd photo: On the left is this (Tojiro) knife, and on the right is the Hachiya knife. As you can see, the handle structure is different. Generally, the one on the left is of higher quality. The one on the right is also of high quality, but it can be difficult to maintain its quality with this structure without high technical skills. However, Hirata Cutlery, which manufactured the Hachiya knife, has high technical skills, so it is of high quality. For the 23rd photo: This is the Tojiro knife being sold on this page. Its blade gradually becomes thinner, a characteristic that helps maintain consistent sharpness over a longer period. Professional chefs who cut large quantities of food daily tend to prefer this type of knife. For the 24th photo: This is the Hachiya knife. The blade's angle changes sharply from a certain point, a feature that provides excellent sharpness. Professional chefs who prioritize sharpness above all else tend to prefer this type of knife. Honestly, either of the shapes mentioned earlier is fine; it ultimately comes down to personal preference. Both the Tojiro knife and the Hachiya knife are made from genuine VG10 steel, and both are excellent knives. ・What is the meaning of the characters printed on the blades? Three Japanese characters are printed on the right side of the blade. The first two characters read "Fujitora," and the last character means "work." ・What is Tojiro Corporation? This company is located in Tsubame City, Niigata Prefecture, Japan, a city renowned for its cutlery production and metal processing. Tojiro is a great company that offers knives sharp and durable enough to satisfy professional chefs, at the lowest possible price. In fact, many professional chefs use Tojiro knives. The company also produces many knives with excellent hygiene. Apart from the fact that it is difficult to tell the difference between the F-series and FU-series, this company is great, in my opinion. By the way, the F series and FU series knives are the same. The names, logos, sales channels, the way the sales prices are determined, and the warranty systems are just different, but the contents of the knives are exactly the same. ・Who I would recommend this knife to. I would recommend this to anyone who wants a Santoku knife with excellent sharpness, lasting sharpness, and rust resistance. For maintenance, a whetstone is ideal, but a honing rod or pull-through sharpener can also be used. ■About me■I am a Japanese living in Tokyo and I love to cook. I sell only real items. Also, please do not worry about used items. I possess a permit to sell used issued by the Japanese police. ・About new kitchen knives.I sell only great value for money knives, which are almost unknown outside of Japan. ・About used kitchen knives.I sell only used knives that are of original quality, condition, and commensurate with the purchase price. ・About other items.I sell items that I think are good and yet difficult to find outside of Japan. ・About the auction.I do not auction items for which I know the manufacturer, material, and MPN because I know the fair price. I will auction items that have unclear things, items that are new but have been opened for photography, or when replacing inventory. ■About Delivery■①I send items via Japan Post or Fedex. ②Since around January 2020, there have been many airline flight delays worldwide.
